What can I say? Everyone waxes poetic about popovers!  These egg batter muffins perpetually delight café customers and inspire nostalgia. Delicious plain or as a popover egg sandwich available in feta-dill or cheddar with a sriracha-maple drizzle.

The first year that the Ashfield Farmer’s Market was established, I was a preschool teacher at the Ashfield Community Preschool. A colleague and I collaborated with the market managers and created the Ashfield Community Preschool weekly bake sale. The following year, I continued the tradition on my own baking treats in my kitchen for the market.  My cinnamon buns were a perennial favorite then and now!

Another favorite item at the farmer’s market were my chocolate chip scones. This scone recipe is versatile and provides the canvas for all sorts of sweet and savory additions.

The inspiration for the mini muffins came from the cellophane bags filled with tiny muffins that my Kindergarten students bring for snack.  The blueberry version is an adaptation of the iconic Jordan Marsh blueberry muffin. A childhood favorite of mine. Also available in pumpkin spice. These are the perfect size for snacking!

If you find yourself in West Stockbridge, MA make sure to swing by the No. Six Depot Café and Roastery housed in the 1834 train station.  I sampled a lot of coffee for the café before I discovered No. Six Depot.  It is the most delicious coffee in Western MA!
